An automatic update to my computer messed with my Libre spreadsheet and turned it into an excel sheet. I don’t want excel and what is it doing changing files

most probably your LibreOffice spreadsheets are still LibreOffice spreadsheets but an update changed the association of .ods file extension to Excel, which means: (Double) click on an .ods file tries to call Excel to open the file (Write a nice letter to Microsoft for hijacking foreign formats, though the application dealing with these files natively is installed)
- First action: Don’t use double click for a moment
- Right click on an
.odsspreadsheet file - Use
Open with..and select LibreOffice as application to be used to open that file -
Important Check
[x] Always use this app to open .ods files(or similar)
From now on all .ods files should open again with LibreOffice.
(You may also start LibreOffice and use File -> Open to assure that files are opened correctly by LibreOffice, but this won’t correct an unwanted file association).
