I’m trying do create a nested list without bullets, without numbering, but only using indent spaces. I’m trying do to it creating my list style. Is it possible?
My problem right now is I cannot see the promote/demote buttons in bottom bar for my list (only with this style).

Your question is incomplete because you didn’t describe how you “create your list style”. You didn’t either mention your OS name nor LO version.
I’ll then assume you are familiar with (or at least know of the existence of) list styles. This is not the same as Format
>Bullets & Numbering
which is a kind of direct formatting and applies only to the current list.
A list style configures the properties and appearance of a multi-level sequence counter. It must be associated to a paragraph style for better ease of use through settings in Outline a List
tab of paragraph style.
For simplification you can use built-in list style Numbering 123 which provides a common number at every level and proportional indent.
Promoting is done by pressing Tab at the very beginning of a list item. Shift+Tab is the key combination for demoting.
To get an unnumbered item, press Bksp at the very start of a list item. This suppresses numbering. Pressing a second time removes the paragraph break as is usual in a non-list paragraph.
