Mac OS Catalina and this issue happened about the same time. At first I just saved the read-only that opened, but now am having trouble with that.

And that’s the point - you don’t know where your email client cached that file to pass it over to LibreOffice and LibreOffice got no permission to create a lock file in the email client’s cache directory (=temporary directory). Just don’t double click email attachments to open (and, more worse, edit 'em), but store them to some known directory (e.g: /User/<yourusername>/Documents
and open from that known place - and/or provide LibreOffice with Full Disk Access (this anyway doesn’t remove the risk of email client deleting the cached file, even if you have edited the attachment and spent some work into that).
