Same result as @mikekaganski - colors are exported into PDF file.

Perhaps you try a new LO user profile?
.
Please provide your OS and LO version for better estimation of your problem.

Version: 7.5.6.2 (X86_64) / LibreOffice Community
Build ID: 50(Build:2)
CPU threads: 2; OS: Linux 5.4; UI render: default; VCL: gtk3
Locale: de-DE (de_DE.UTF-8); UI: de-DE
Ubuntu package version: 4:7.5.6~rc2-0ubuntu0.20.04.1~lo1
Calc: threaded

Describe how you do this.

If you do it via the printer, pay attention to the following setting

Also uncheck, if checked, the setting Print text in black in menu Tools > Options > LibeOffice Writer > Print

No effect when exporting to PDF, at least for me (LibreOffice 7.4.7.2 on Windows 10).
Also tested checking Convert colors to grayscale (menu Tools - Options - LibeOffice - Print).

@edd_borz92,
Could it be some accessibility settings of your PDF viewer?
Have you tested with another PDF with colors? Test with ODT to PDF with color text.pdf (9.0 KB).

For another test, please, share the resulting PDF of your sample document.

How are you trying? With command Print (see @PKG comment) or Export?

Thank you so much for your support I finally understood the mystery. For some reason windows high contrast black theme changed the view, only the view, of colors when I look at pdf. When I changed the theme to normal white I could see the words colored. It’s weird because on Writer I see the colors but not in pdf. So it’s alright the pdf converted correctly from odt
