In case you think it is an LO bug, check whether it has been fixed: install a 25.2 or 25.8 version (the latter has not yet bubbled up in Fedora 42; so it may still be one of the early adopters version or we’re too close to Fedora 43 for maintainers to care to upgrade to 25.8 in F42).
Bugs are submitted at TDF Bugzilla. Prepare a sample file to attach to the report and explain in minute detail what you do (the idea is that a dumb user can reproduce your issue).
Attach a reduced sample file here (1- or 2-page) making sure the problem still persists. If it also happens on my computer, it may be related to something weird in your document.

Wrong! If you use items in the Cross-references
tab, you insert a reference to a specific (constant) heading. What is usually needed in a header or footer is the current (dynamic) heading. This field is selected in the Document
tab:

Reduce your document to 1 or 2 pages, making sure the freeze still occurs and attach it to a comment.
I see nothing particular in the sample document.
A question may be: how do you generate this kind of “bibliography”? You styled it Body Text while a separate paragraph style would allow you to control the formatting independently from your main topic. But i don’t think this is a factor in the problem.
You seem to use styling. However I see no use of character styles, but there is no direct formatting either.
In your 600-page document, how do you emphasise words and citations? With a character style like Emphasis or Strong Emphasis? Or do you directly Ctl+I or Ctl+B? In the latter case, this contributes to huge document size inflation and in the extreme instability.
Are you using sections? If you inherited your formatting skills from M$ Word, Word sections are roughly equivalent to Writer page styles. A Writer section is intended mainly for a temporary change in number of columns. Using them instead of page styles is extremely expensive in performance. The same may happen with tables whose rows extend over many pages. The matter is made worse with line breaks inserted instead of paragraph breaks (less likely to happen when you use styles consistently because style swith can occur only at paragraph break).

First part of the quotation is about your decision on book structure. What is your goal with Heading 1? Where do you use it? Your sample shows you styled your chapter heading with Heading 2 (at level 2). What is your level 1?
The second part of the quotation intended to make sure you are aware that the field dialog remains open after insertion. Therefore, LO is not “frozen” just because you still see the dialog. When you press Close, does it go away?

I never got a thorough tutorial on using LO for writing especially long books. In the past I mainly only used it for note taking.
DO you have a good step by step to show how to get the original issue working?
Would implementing what you propose with levels and headings?
The goal with “header1” is mainly to organize the book into chapters with easily identifiable headers in the navigator
the Header1 for each chapter concept was merely a guess and I didn’t know I had to do something else to make chapters change with chapter in the header function work

There is no ban on using Heading 2 on chapters. Implicitly, this suggests you are using Heading 1 for a more global subdivision of the book, like part or volume. But if you want the chapter to be reported in the header, you must select level 2 in the field dialog. Otherwise you get whatever is presently current at level 1 repeated without change in header.
It comes to my mind that you probably have no Heading 1 in your 600-page book. So it is possible that a non-existent or empty level-1 heading while there are many level-2’s might upset Writer and cause the freeze. So, check the structure of your book. The Navigator is a great tool for that.
Since the issue does not occur on my side, it is difficult to suggest a fix.
This is effectively the goal. But, as I said, you styled your chapters in the sample with Heading 2 and obviously you somehow disabled Heading 1 in Tools
