I used to be able to name a document and choose what format to save it in. Now I get nothing but the whirling beach ball! Help! using Mac Catalina 10.15.5

You could try

changing the security settings to allow libreoffice to make changes to your system.

start
soffice.binfrom a terminal and see if any error is writen to it, wenn you try to save a file. (If you need help with this, just ask in the comments)
